Breakfast/Lunch: I had a bagel and cheese. Nothing too fancy.
Dinner: Because I will be at Hillel for the Bears game tonight and not enjoying the awesome chili, I am making a roast chicken for myself to eat before and use the leftovers for the next few days. To make it, I took a 4 pound chicken and cleaned it and patted it dry. Inside the cavity I put rosemary and thyme, half an onion, and 3 cloves of garlic. On the outside of the bird, I put rosemary and thyme with a little bit of mayonnaise. Mayonnaise on your chicken you say!?! Well, there are two way to ensure moist chicken: a wet and a dry rub. Dry rubs are great, don’t get me wrong, but I have found that a little bit of mayo with your seasonings goes a lot further in creating a moist and delicious chicken when roasting a chicken. If this was on a grille, I would stick with a dry rub.
That said, I cooked it at 450 degrees for 15 minutes followed by about an hour and a half at 350 degrees. This is what it looked like when it came out:
With this, I am having a half cup of rice and a serving of vegetables (that were previously frozen). All in all, this is what my dinner came out to look like:
Today wasn’t so hard, overall. I was pretty hungry in the afternoon. Sitting here writing this while everyone eats chili....not cool. However, the dinner I made was delicious. I’m looking forward to using the leftovers this week!
This evening following the Bears game I will be using the bones and juices from cooking to prepare to make chicken broth. I will be putting it on the slow cooker all day tomorrow. I might also make bread. We will see and I will post tomorrow!
